Lowcountry Boil is a classic summertime meal, that is delicious and easy to prepare for a crowd.  It is perfect for beach parties or backyard bar-b-que’s.  This Lowcountry Boil recipe is one of my favorites for a few reasons.  It is super easy to make, adding in one ingredient at a time and letting cook a few minutes before adding the next.  It cooks up quick and makes little mess for so much food, making it perfect for large servings.  Also, you can play around with the ingredients a little bit.  If you would like to add some crab legs (or whole crab), you would add them in with the shrimp or instead of the shrimp.  You can also add in some large cuts of carrots or other veggies as you wish.

Jerk Chicken is an amazing dish I love to eat, but have always been a bit intimidated to make myself.  This was mainly because I didn’t have my own recipe for it, and when you go looking for Jerk sauce recipes, there are many variations out there.  It seems as though everyone has their own special Jerk Chicken recipe, that varies slightly from each other.  After much searching I came up with my own Spicy Jerk Sauce recipe, made from a combination of recipes I found.  I think you’ll agree that this is a good contender with authentic Jerk Chicken that can be found at Jamaican restaurants.

Blueberry Crisp is one of my families favorite fruit dessert recipes.  It is great for summertime when blueberries are in season and extra delicious.  Super easy to put together, Blueberry Crisp is perfect to bring to potlucks or picnics.  This recipe makes 12 servings, but it will go fast.  You can also halve the recipe without too much effort, the nice thing about a crisp is that unlike other desserts, measurements don’t have to be exact.

Tomato Basil Sandwiches is a  great summertime entree.  They are easy to make, and the tomato-basil is very refreshing.  When it starts getting hot outside, I start looking for recipes that don’t require a lot of prep work or cooking.  These Tomato Basil Sandwiches can be made on the grill, along with corn or other veggies to be served as a side dish.  However, I like to use a Panini press or similar indoor grill sometimes instead of cooking outside, especially when it is really hot out.

Creamy Pasta Primavera is a favorite dinner recipe, especially when spring veggies are abundant.  With farmers markets reopening, this is a great recipe to make that truly highlights the best in-season, local vegetables have to offer.  Creamy Pasta Primavera is a cinch to make, taking about 20 minutes total.  This recipe gets even better though, by offering a low calories, low fat, yet full flavor to the traditional Pasta Primavera recipes, with a hint of lemon.

Like a lot of my recipes, this is not a traditional Chicken Gumbo Recipe.  Even though this Gumbo is not prepared in the traditional sense, it tastes every bit as amazing, with a fraction of the effort.  With no roux, this Chicken Gumbo is more thin like a soup, but works wonderfully when served on top of rice.  This more of a Creole Recipe then Cajun.  By not adding a roux to the recipe, this Chicken Gumbo Recipe is much healthier, reducing fat and calories.

Orange Blossom Muffins are delicious little treats that are perfect for a quick breakfast, or to put out at brunch.  They are easy to make, taking less then an hour start to finish.  Some pastries can be a bit difficult to make, but not Orange Blossom Muffins.  If you have a fear of baking, rest assured these muffins are a snap.

Sugar cookies are always a favorite to make, especially around holidays.  They are simple to make, using very few ingredients and not taking up a lot of time.  Children love to help roll out the dough and cut out the cookies, so you can make it a family event.  Baking some cut out sugar cookies is a great way to spend time with the family, and teach your children the basics of cooking.
