Corn and Cheddar Chowder

If you couldn’t tell by now, I am a soup lover. I love trying out new soups, finding new ways to delicately simmer ingredients until their flavors meld together. With Spring in full bloom and Summer just around the corner, soon grocery stores and farmers markets will be flooded with local sweet corn. What better way to celebrate the great corn harvest, then to make and amazing Corn and Cheddar Chowder.
Corn and Cheddar Chowder is hearty enough to be a meal on its own, but still makes an excellent spring and summer soup. The corn gives Corn and Cheddar Chowder a nice sweet flavor, and even though it is considered a chowder, it is light enough to be served on warm days. One of the things I really enjoy about Corn and Cheddar Chowder, is how quickly you can whip this up. Many soups can take hour to make, needing to simmer for long periods of time to properly marry the flavors together. This chowder can be made very fast, in less time then many other meals. Who says you have to works all day to make an awesome soup?

Sweet Corn and Cheddar Chowder
1 medium onion, chopped
1 celery stalk, chopped
1 carrot, chopped
3 tablespoons butter
2 teaspoons dry mustard
1 ½ cups vegetable stock
¾ pound potatoes, peeled and diced
1 teaspoon dried thyme
1 bay leaf
3 cups fresh corn
3 cups half-and-half or milk
2 cups (8 ounces) grated cheddar cheese, divided
1 green onion, sliced
In a large saucepan or stockpot, sauté onion, celery, and carrot in butter for 5 minutes. Stir in mustard and next 4 ingredients. Bring to a boil, reduce heat, cover, and simmer 10 minutes. Add corn and half-and-half, and simmer 6 minutes. Reduce heat to low and add 1 ½ cups cheese. Stir until just melted. Pour into bowls and top with remaining cheese and green onion.
