Broccoli Salad is the perfect side dish to welcome the spring. It combines the best of everything, veggies, bacon, cheese and yummy dressing.

Broccoli Salad is the perfect side dish to welcome the spring.  Even though many people are still dealing with the snow, and will be for a little while longer, here in South Carolina the temps are warming.  You can smell spring in the air as trees start budding and flowers start to push through the soil.  To celebrate the coming of spring, I decided to make this delicious and super easy broccoli salad.

Broccoli salad combines the best of both worlds, healthy veggies, bits of bacon, yummy cheese, and a slightly sweet dressing.  This is a great salad to make when you are short on time or ideas.  A wonderful dish to pass at potlucks and picnics.  To make it even easier on yourself, you can use bacon bits instead of cooking up a pound of bacon and crumbling it.

Another important thing about this recipe for broccoli salad, is that the amounts of the ingredients are kind of estimates.  Since no two heads of broccoli are going to produce the same amount, you may not use all of the onion, bacon, or cheese.  You have to use your own discretion when adding the ingredients.  If you feel like a pound of bacon would be too much, add what you feel is right.  The same is true for the dressing, start by adding the lesser amounts of vinegar and sugar.  Mix until well combined, taste it and then add more if you like.  When adding the dressing to the broccoli, add half at first and mix well.  Add more as needed.

    This dish is super great, especially in getting kids to eat their veggies. If you want to make it a little healthier, you can use roasted sunflower seeds or even dried cranberries instead of bacon.
